Description
Living up to the country’s reputation for sophisticated production, this particular Colombian single origin uses a fairly innovative processing technique to ensure high quality and consistency. Specifically, this coffee goes through an extended fermentation, where freshly pulped beans are added to the fermentation tank each day for 3-5 days, raising the pH and allowing for a longer fermentation.
Origin’s roast profile has revealed some subtle stone fruit and a candy-like sweetness that we particularly enjoyed in a French Press. It has a very full body, and smoky quality that hints at molasses.
